Amatiteña Origen

Delving even deeper into the roots of tequila’s early production, Amatiteña ‘Origen’ offers an example of their historical, estate-grown tequila at a notably higher (and more traditional) 49% ABV. Prominent aromas of mesquite, burnt marshmallow, and lemon zest are bolstered on the palate by dried oregano, star anise, menthol, dried cherry, grilled pineapple, peanut shell, and fresh seaweed. A Blanco tequila produced in Amatitán, Jalisco (NOM 1477) by Maestro Tequilero Alberto Partida of 100% Azul, a single estate agave that is cooked in a traditional, mesquite-wood-fired stone oven (without steam), then milled using an automated, traditional tahona. Finally, fermentation is with fibers in open-air wood tanks, using local spring water & ambient yeast then distilled in historical copper pot stills from the 19th century.
